Salt and pepper, to taste
2 tablespoons olive oil
1 cup fresh mint leaves
2 tablespoons white wine vinegar
1 tablespoon sugar
2 tablespoons hot water
Instructions
Season lamb chops with salt and pepper.
Heat olive oil in a grill pan over medium-high heat.
Cook lamb chops for 3-4 minutes per side for medium-rare.
For mint sauce, finely chop mint leaves.
Mix chopped mint with vinegar, sugar, and hot water until sugar dissolves.
