Garlic Butter Chicken with Zucchini & Corn

Description

Tender chicken cooked in a rich garlic butter sauce with fresh zucchini and sweet corn.


Ingredients

4 boneless, skinless chicken breasts
2 tablespoons butter
4 garlic cloves, minced
1 medium zucchini, sliced
1 cup fresh or frozen corn kernels
Salt and pepper to taste
1 tablespoon olive oil
Fresh parsley for garnish (optional)


Instructions

Season the chicken breasts with salt and pepper.
Heat olive oil in a large skillet over medium heat.
Add chicken and cook until golden and cooked through, about 6-7 minutes per side. Remove and set aside.
In the same skillet, melt butter and add minced garlic. Cook until fragrant, about 1 minute.
Add zucchini and corn, sauté until tender, about 5-7 minutes.
Return chicken to the skillet, spoon garlic butter sauce over the top, and heat through for 2 minutes.
Garnish with fresh parsley if desired and serve warm.
