Description

A crispy breaded chicken breast topped with marinara sauce and melted mozzarella and Parmesan cheese.


Ingredients

4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs, beaten
1 1/2 cups breadcrumbs
1/2 cup grated Parmesan cheese
2 cups marinara sauce
1 1/2 cups shredded mozzarella cheese
Salt and pepper to taste
Olive oil for frying
Fresh basil leaves for garnish (optional)


Instructions

Preheat your oven to 400°F (200°C).
Pound chicken breasts to an even thickness.
Season chicken with salt and pepper.
Dredge each chicken breast in flour, then dip into beaten eggs, and coat with a mixture of breadcrumbs and Parmesan cheese.
Heat olive oil in a large skillet over medium heat.
Fry chicken breasts until golden brown on both sides, about 3-4 minutes per side.
Place fried chicken in a baking dish.
Top each breast with marinara sauce and shredded mozzarella.
Bake in the oven for 15-20 minutes, until cheese is melted and bubbly.
Garnish with fresh basil before serving, if desired.
