- 4 carrots, chopped
- 3 potatoes, diced
- 1 onion, quartered
- 2 cups broccoli florets
- Fresh herbs (rosemary, thyme) for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Pat the chicken dry and rub it with olive oil, salt, pepper, garlic powder, and paprika.
- Place the chicken in a roasting pan.
- Arrange the chopped vegetables around the chicken.
- Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken is cooked through and the juices run clear.
- Let the chicken rest for 10 minutes before carving.
- Serve with the roasted vegetables and garnish with fresh herbs.
