Description

A light and nutritious salad made with quinoa and black beans, perfect for a refreshing meal.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn, fresh or frozen
  • 1 red bell pepper, diced
  • 1/2 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a saucepan, combine quinoa and water; bring to a boil.
  3. Reduce heat, cover, and simmer for about 15 minutes or until water is absorbed.
  4. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
  5. In a large bowl, combine the cooked quinoa, black beans, corn, red bell pepper, red onion, and cilantro.
  6. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Chill in the refrigerator for at least 30 minutes before serving.
