Ingredients

- 4 medium potatoes, peeled and diced
- 1 cup mixed vegetables (carrots, peas, corn)
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
- Add the diced potatoes and mixed vegetables to the pot, stirring to combine.
- Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer until the potatoes are tender, about 15-20 minutes.
- Once the potatoes are cooked, use a potato masher to mash some of the potatoes for a thicker consistency.
- Stir in the milk and shredded cheese, mixing until the cheese is melted and the soup is creamy.
- Season with salt and pepper to taste. Serve hot.
Notes
- For a vegan version, substitute cheese and milk with plant-based alternatives.
- Feel free to add your favorite herbs for extra flavor.
