Potato, Vegetable, Cheese Soup: A Comforting Delight!

Description

A creamy and comforting potato, vegetable, and cheese soup that warms the soul.


Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
  2. Add the diced potatoes and mixed vegetables to the pot, stirring to combine.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer until the potatoes are tender, about 15-20 minutes.
  4. Once the potatoes are cooked, use a potato masher to mash some of the potatoes for a thicker consistency.
  5. Stir in the milk and shredded cheese, mixing until the cheese is melted and the soup is creamy.
  6. Season with salt and pepper to taste. Serve hot.

Notes

  • For a vegan version, substitute cheese and milk with plant-based alternatives.
  • Feel free to add your favorite herbs for extra flavor.
