  • 1 lb chicken thighs, boneless and skinless
  • 2 cups basmati rice
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons shawarma spice mix
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Stir in the shawarma spice mix and cook for another minute.
  4. Add the chicken thighs and cook until browned on all sides.
  5. Pour in the diced tomatoes and chicken broth, and bring to a simmer.
  6. Add the basmati rice, stir well, and cover the pot.
  7. Reduce heat to low and cook for 20 minutes or until rice is tender and chicken is cooked through.
  8. Fluff the rice with a fork and garnish with fresh parsley before serving.
