A quick and easy one pot pasta and broccoli recipe that combines tender pasta and fresh broccoli in a flavorful garlic and Parmesan sauce. Perfect for a simple weeknight dinner.
Ingredients
12 ounces uncooked penne pasta
4 cups broccoli florets
4 cups water
2 cups low sodium vegetable broth
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Instructions
In a large pot or deep skillet, combine the penne pasta, broccoli florets, water, vegetable broth, minced garlic, olive oil, salt, black pepper, and red pepper flakes.
Bring the mixture to a boil over medium-high heat, stirring occasionally to prevent the pasta from sticking.
Once boiling, reduce the heat to medium and simmer uncovered for about 12 to 15 minutes, stirring occasionally, until the pasta is al dente and the liquid has mostly evaporated.
Remove the pot from heat and stir in the grated Parmesan cheese until melted and well combined.
Sprinkle the chopped fresh parsley over the pasta and broccoli and stir gently to combine.
Serve immediately while hot.
