Description
A quick and nourishing dinner featuring tender chicken and crisp broccoli tossed in a light sesame sauce.
Ingredients
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
3 cups broccoli florets
2 tablespoons sesame oil
3 cloves garlic, minced
1 tablespoon ginger, grated
1/4 cup low-sodium soy sauce (or tamari for gluten-free)
2 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon toasted sesame seeds
1 tablespoon cornstarch mixed with 2 tablespoons cold water
Salt and pepper to taste
Instructions
Heat sesame oil in a large skillet over medium-high heat.
Add chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
In the same skillet, add garlic and ginger; sauté until fragrant, about 1 minute.
Add broccoli and a splash of water; cover and steam for 3-4 minutes until broccoli is tender-crisp.
Return chicken to the skillet.
In a bowl, whisk together soy sauce, honey, and rice vinegar.
Pour sauce over chicken and broccoli, then add cornstarch slurry.
Cook, stirring, until sauce thickens and coats everything evenly, about 2 minutes.
Sprinkle with toasted sesame seeds before serving.
