Ingredients
1 cup natural peanut butter (creamy or chunky)
3/4 cup granulated sugar
1 large egg
1 teaspoon baking soda
1/2 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, combine 1 cup natural peanut butter, 3/4 cup granulated sugar, 1 large egg, 1 teaspoon baking soda, 1/2 teaspoon vanilla extract, and 1/4 teaspoon salt.
Mix all ingredients thoroughly until a smooth dough forms.
Using a tablespoon or cookie scoop, form dough balls and place them about 2 inches apart on the prepared baking sheet.
Flatten each dough ball gently with a fork, making a crisscross pattern on top.
Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden.
Remove from oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
