Ingredients
1 can (15 oz) chickpeas, drained and rinsed
1 large cucumber, diced
1 cup cherry tomatoes, halved
1/2 cup red onion, finely chopped
1/2 cup crumbled feta cheese
1/4 cup Kalamata olives, pitted and sliced
1/4 cup fresh parsley, chopped
3 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
In a large mixing bowl, combine the drained and rinsed chickpeas, diced cucumber, halved cherry tomatoes, finely chopped red onion, crumbled feta cheese, sliced Kalamata olives, and chopped fresh parsley.
In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, dried oregano, salt, and black pepper until well combined.
Pour the dressing over the salad ingredients in the large bowl.
Gently toss all ingredients together until the salad is evenly coated with the dressing.
Taste and adjust seasoning with additional salt or lemon juice if desired.
Serve immediately or refrigerate for up to 2 hours to allow flavors to meld before serving.
