Description

A comforting and flavorful chicken soup inspired by the creamy, savory flavors of the famous Marry Me Chicken dish. This soup combines tender chicken, sun-dried tomatoes, garlic, and herbs in a rich broth with cream and Parmesan cheese for a deliciously satisfying meal.

2 tablespoons olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
4 cups low-sodium chicken broth
2 cups cooked chicken breast, shredded
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon crushed red pepper flakes
Salt, to taste
Freshly ground black pepper, to taste
2 tablespoons chopped fresh basil


Instructions

Heat olive oil in a large pot over medium heat.
Add the diced onion and sauté for 5 minutes until softened and translucent.
Add the minced garlic and chopped sun-dried tomatoes; cook for 2 minutes, stirring frequently.
Pour in the chicken broth and bring to a simmer.
Add the shredded cooked chicken, dried oregano, dried thyme, and crushed red pepper flakes.
Simmer the soup for 15 minutes to allow the flavors to meld.
Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese until well combined.
Season with salt and freshly ground black pepper to taste.
Cook for an additional 5 minutes, stirring occasionally, until the soup is heated through and slightly thickened.
Remove from heat and stir in the chopped fresh basil.
Ladle the soup into bowls and serve warm.
