Ingredients

  • 1 red bell pepper, diced

  • 1 cup fresh parsley, chopped
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded cabbage, grated carrots, diced red bell pepper, chopped green onions, and parsley.
  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper.
  3. Pour the dressing over the cabbage mixture and toss until well combined.
  4. Cover and refrigerate for at least 2 hours, or overnight for best flavor.
  5. Serve chilled and enjoy!
