Description

A luxurious twist on the classic tiramisu, featuring layers of creamy mascarpone and tart cranberry, perfect for festive occasions.


Ingredients

  • 1 cup cranberry juice
  • 1 cup fresh cranberries
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 package ladyfinger cookies
  • Cocoa powder for dusting

Instructions

  1. In a saucepan, combine cranberry juice and fresh cranberries. Cook over medium heat until cranberries burst and mixture thickens, about 10 minutes. Let cool.
  2. In a mixing bowl, whip heavy cream until soft peaks form. In another bowl, mix mascarpone cheese, sugar, and vanilla extract until smooth.
  3. Gently fold the whipped cream into the mascarpone mixture until well combined.
  4. Dip ladyfinger cookies briefly in the cranberry mixture and layer them in a serving dish.
  5. Spread a layer of the mascarpone mixture over the ladyfingers, then add another layer of dipped ladyfingers.
  6. Repeat the layers until all ingredients are used, finishing with the mascarpone mixture on top.
  7. Refrigerate for at least 4 hours or overnight to set.
  8. Before serving, dust the top with cocoa powder and garnish with additional cranberries if desired.

Notes

  • For a sweeter dessert, adjust the sugar in the mascarpone mixture.
  • Can be made a day in advance for better flavor.
  • Substitute ladyfingers with sponge cake if preferred.
