- 1 cup cranberry juice
- 1 cup fresh cranberries
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 package ladyfinger cookies
- Cocoa powder for dusting
Instructions
- In a saucepan, combine cranberry juice and fresh cranberries. Cook over medium heat until cranberries burst and mixture thickens, about 10 minutes. Let cool.
- In a mixing bowl, whip heavy cream until soft peaks form. In another bowl, mix mascarpone cheese, sugar, and vanilla extract until smooth.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- Dip ladyfinger cookies briefly in the cranberry mixture and layer them in a serving dish.
- Spread a layer of the mascarpone mixture over the ladyfingers, then add another layer of dipped ladyfingers.
- Repeat the layers until all ingredients are used, finishing with the mascarpone mixture on top.
- Refrigerate for at least 4 hours or overnight to set.
- Before serving, dust the top with cocoa powder and garnish with additional cranberries if desired.
Notes
- For a sweeter dessert, adjust the sugar in the mascarpone mixture.
- Can be made a day in advance for better flavor.
- Substitute ladyfingers with sponge cake if preferred.
