Description

Loaded Potato Skins are a delicious appetizer made from crispy potato halves filled with cheese, bacon, and green onions, perfect for any gathering.


Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sour cream
  • 1/4 cup chopped green onions
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then pierce them with a fork.
  3. Rub the potatoes with olive oil, salt, and pepper.
  4. Bake the potatoes for 45-60 minutes until tender.
  5. Let the potatoes cool slightly, then cut them in half lengthwise.
  6. Scoop out some of the flesh, leaving a small border.
  7. Brush the insides with olive oil and season with salt and pepper.
  8. Return the potato halves to the oven and bake for an additional 10-15 minutes until crispy.
  9. Fill each potato skin with cheese and bacon, then return to the oven until the cheese is melted.
  10. Top with sour cream and green onions before serving.

Notes

  • For a vegetarian option, omit the bacon.
  • Feel free to add other toppings like jalapeños or avocado.
