- 4 cups beef broth
- 1 cup white wine
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon sugar
- Salt and pepper to taste
- 1 baguette, sliced
- 2 cups shredded Gruyère cheese
Instructions
- In a large pot, heat olive oil and butter over medium heat.
- Add the sliced onions and sugar, cooking until the onions are caramelized, about 15-20 minutes.
- Pour in the white wine and beef broth, bringing the mixture to a simmer.
- Season with salt and pepper to taste.
- Meanwhile, preheat the oven to 350°F (175°C).
- Place the baguette slices on a baking sheet and toast in the oven until golden brown.
- To serve, ladle the soup into bowls, top with toasted baguette slices, and sprinkle with Gruyère cheese.
- Broil the bowls in the oven until the cheese is bubbly and golden.

- For a vegetarian version, substitute beef broth with vegetable broth.
- Feel free to add herbs like thyme or bay leaves for extra flavor.
