Ingredients
1 pound ground turkey
1 medium zucchini, diced
1 medium red bell pepper, diced
1 cup chopped spinach
1 small yellow onion, diced
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
Salt, to taste
Black pepper, to taste
1/4 cup shredded cheddar cheese
Instructions
Heat olive oil in a large skillet over medium heat.
Add diced onion and cook for 3-4 minutes until translucent.
Add minced garlic and cook for 1 minute until fragrant.
Add ground turkey to the skillet and cook, breaking it apart with a spatula, until browned and cooked through, about 6-8 minutes.
Stir in smoked paprika, ground cumin, dried oregano, crushed red pepper flakes, salt, and black pepper.
Add diced zucchini and red bell pepper to the skillet and cook for 5 minutes until vegetables are tender.
Stir in chopped spinach and cook for an additional 1-2 minutes until wilted.
Sprinkle shredded cheddar cheese over the skillet and cover for 1-2 minutes until cheese melts.
Remove from heat and serve warm.
