Description

Italian Quesadillas are a delightful fusion of traditional quesadillas and Italian flavors, featuring a crispy tortilla filled with cheese, herbs, and savory ingredients.


Ingredients

  • 4 large flour tortillas
  • 2 cups shredded mozzarella cheese
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup cooked spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup fresh basil, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a bowl, mix together the mozzarella, ricotta, Parmesan, spinach, sun-dried tomatoes, basil, garlic powder, salt, and pepper.
  2. Heat a skillet over medium heat and add a drizzle of olive oil.
  3. Place one tortilla in the skillet and spread a portion of the cheese mixture on half of the tortilla.
  4. Fold the tortilla over to cover the filling and cook until golden brown, about 3-4 minutes.
  5. Flip the quesadilla and cook the other side until golden and the cheese is melted.
  6. Remove from the skillet and repeat with the remaining tortillas and filling.
  7. Cut into wedges and serve warm.

Notes

  • Feel free to add other ingredients like cooked chicken or mushrooms for extra flavor.
  • Serve with marinara sauce or pesto for dipping.
  • These quesadillas can be made ahead and reheated in the oven.
