Description
Tender chicken breasts wrapped around a creamy spinach and garlic filling, pan-seared and baked to golden perfection.
Ingredients
4 chicken breasts
4 oz cream cheese
2 cups fresh spinach
2 cloves garlic, minced
1/4 cup grated Parmesan cheese
Salt, to taste
Black pepper, to taste
2 tablespoons olive oil
Instructions
Preheat oven to 375°F (190°C).
In a skillet over medium heat, warm 1 tablespoon olive oil. Add minced garlic and fresh spinach, sauté until spinach is wilted and tender, about 2-3 minutes. Remove from heat and let cool slightly.
In a bowl, combine cream cheese, sautéed spinach and garlic, and Parmesan cheese. Mix well.
Place each chicken breast between two sheets of plastic wrap and gently pound to about 1/4 inch thickness.
Season both sides of the chicken breasts with salt and black pepper.
Spread an even layer of the cream cheese and spinach mixture over each flattened chicken breast.
Carefully roll up each breast tightly, securing with toothpicks if needed.
Heat remaining 1 tablespoon olive oil in an oven-safe skillet over medium-high heat. Sear the chicken roll ups on all sides until golden brown, about 2 minutes per side.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, until chicken is cooked through and juices run clear.
Remove toothpicks and slice the roll ups into 1-inch pieces.
Arrange slices in a row on a white rectangular plate. Drizzle with olive oil and sprinkle with chopped parsley before serving.
