- 2 lbs chicken breasts
- 1 cup chicken broth
- 1 packet taco seasoning
- 1 cup salsa
- 8 small tortillas
- 1 cup shredded cheese
- 1 cup lettuce, shredded
- 1/2 cup sour cream
- 1/2 cup diced tomatoes
Instructions
- Place chicken breasts in the Instant Pot.
- Add chicken broth, taco seasoning, and salsa.
- Seal the lid and cook on high pressure for 15 minutes.
- Allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
- Shred the chicken with two forks and mix it with the sauce.
- Warm the tortillas in a pan or microwave.
- Assemble the tacos with chicken, cheese, lettuce, sour cream, and tomatoes.
Notes
- For extra flavor, marinate the chicken in taco seasoning for a few hours before cooking.
- Feel free to add your favorite toppings like avocado or jalapeños.
- Leftover chicken can be stored in the refrigerator for up to 3 days.
