Description

A quick and flavorful recipe for making chicken tacos using an Instant Pot.


Ingredients

  • 2 lbs chicken breasts
  • 1 cup chicken broth
  • 1 packet taco seasoning
  • 1 cup salsa
  • 8 small tortillas
  • 1 cup shredded cheese
  • 1 cup lettuce, shredded
  • 1/2 cup sour cream
  • 1/2 cup diced tomatoes

Instructions

  1. Place chicken breasts in the Instant Pot.
  2. Add chicken broth, taco seasoning, and salsa.
  3. Seal the lid and cook on high pressure for 15 minutes.
  4. Allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
  5. Shred the chicken with two forks and mix it with the sauce.
  6. Warm the tortillas in a pan or microwave.
  7. Assemble the tacos with chicken, cheese, lettuce, sour cream, and tomatoes.

Notes

  • For extra flavor, marinate the chicken in taco seasoning for a few hours before cooking.
  • Feel free to add your favorite toppings like avocado or jalapeños.
  • Leftover chicken can be stored in the refrigerator for up to 3 days.
