A classic comfort dish layered with crispy eggplant, rich tomato sauce, and melted cheese—all vegetarian and full of flavor.
Ingredients
2 large eggplants, sliced into 1/2-inch rounds
Salt, for sweating eggplant
2 cups marinara sauce
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 cup breadcrumbs
2 eggs, beaten
1/2 cup all-purpose flour
Olive oil, for frying
Fresh basil leaves, for garnish
Instructions
Sprinkle eggplant slices with salt and let sit for 30 minutes to draw out moisture, then pat dry.
Set up breading station: flour, beaten eggs, then breadcrumbs.
Dip eggplant slices in flour, then eggs, then breadcrumbs, pressing to coat.
Heat olive oil in a large skillet over medium heat and fry eggplant slices until golden on both sides. Drain on paper towels.
Preheat oven to 375°F (190°C).
Spread a thin layer of marinara sauce in a baking dish.
Layer fried eggplant slices, more sauce, mozzarella, and Parmesan. Repeat layers ending with cheese on top.
Bake for 25-30 minutes until bubbly and cheese is golden.
Garnish with fresh basil before serving.
