- 1 lb chicken breast, diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup tzatziki sauce
- Pita bread, for serving (optional)
Instructions
- In a bowl, combine diced chicken, olive oil, garlic powder, onion powder, paprika, salt, and pepper. Mix well to coat the chicken.
- Heat a skillet over medium heat and cook the chicken for 6-8 minutes, or until fully cooked and golden brown.
- While the chicken is cooking, prepare the vegetables by chopping the mixed greens, cherry tomatoes, cucumber, and red onion.
- Once the chicken is cooked, assemble the bowls by placing a base of mixed greens, followed by the cooked chicken and fresh vegetables.
- Drizzle tzatziki sauce over the top and serve with pita bread if desired.
