- 2 cups of carrots, sliced
- 2 cups of bell peppers, chopped
- 2 cups of zucchini, sliced
- 1 cup of red onion, chopped

- 1 teaspoon of garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the sliced carrots, chopped bell peppers, sliced zucchini, and chopped red onion.
- In a separate small bowl, whisk together the olive oil, honey, garlic powder, salt, and pepper.
- Pour the glaze over the vegetables and toss to coat evenly.
- Spread the vegetables in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and golden brown, stirring halfway through.
- Remove from the oven and serve warm.
