Ingredients

  • 2 cups of carrots, sliced
  • 2 cups of bell peppers, chopped
  • 2 cups of zucchini, sliced
  • 1 cup of red onion, chopped
  • 3 tablespoons of olive oil
  • 2 tablespoons of honey
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the sliced carrots, chopped bell peppers, sliced zucchini, and chopped red onion.
  3. In a separate small bowl, whisk together the olive oil, honey, garlic powder, salt, and pepper.
  4. Pour the glaze over the vegetables and toss to coat evenly.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and golden brown, stirring halfway through.
  7. Remove from the oven and serve warm.
