- 12 small potatoes
- 1/2 cup mayonnaise
- 2 tablespoons mustard
- 1 tablespoon vinegar
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Paprika for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the potatoes, then pierce them with a fork.
- Bake the potatoes for 30-35 minutes or until tender.
- Let the potatoes cool slightly, then cut them in half and scoop out a small portion of the flesh.
- In a bowl, mix the scooped potato flesh with mayonnaise, mustard, vinegar, green onions, salt, and pepper.
- Fill the potato halves with the mixture.
- Sprinkle paprika on top for garnish.
- Serve warm or at room temperature.
Notes
- For a spicier kick, add a dash of hot sauce to the filling.
- These can be made ahead of time and served cold.
