Description

Deviled Potatoes are a delicious and unique twist on traditional deviled eggs, using small potatoes as the base for a creamy, flavorful filling.


Ingredients

  • 12 small potatoes
  • 1/2 cup mayonnaise
  • 2 tablespoons mustard
  • 1 tablespoon vinegar
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Paprika for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then pierce them with a fork.
  3. Bake the potatoes for 30-35 minutes or until tender.
  4. Let the potatoes cool slightly, then cut them in half and scoop out a small portion of the flesh.
  5. In a bowl, mix the scooped potato flesh with mayonnaise, mustard, vinegar, green onions, salt, and pepper.
  6. Fill the potato halves with the mixture.
  7. Sprinkle paprika on top for garnish.
  8. Serve warm or at room temperature.

Notes

  • For a spicier kick, add a dash of hot sauce to the filling.
