A simple and delicious recipe for a hearty chicken casserole made in a crockpot.
Ingredients

- 4 boneless, skinless chicken breasts
- 1 can of cream of chicken soup
- 1 cup of chicken broth
- 2 cups of mixed vegetables (carrots, peas, corn)
- 1 cup of shredded cheddar cheese
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- In a bowl, mix together the cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper.
- Pour the mixture over the chicken in the crockpot.
- Add the mixed vegetables on top of the chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, sprinkle the shredded cheddar cheese on top and cover until melted.
Notes
- For a creamier casserole, add a cup of sour cream.
- Feel free to substitute the mixed vegetables with your favorites.
- Serve over rice or noodles for a complete meal.
