Ingredients

  • 34 lbs beef chuck roast
  • 2 cups French onion soup
  • 1 cup beef broth
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the beef chuck roast with salt and pepper.
  2. In a large skillet, sear the roast on all sides until browned.
  3. Place the sliced onions and minced garlic in the bottom of the crock pot.
  4. Transfer the seared roast to the crock pot on top of the onions.
  5. In a bowl, mix together the French onion soup, beef broth, Worcestershire sauce, and thyme.
  6. Pour the mixture over the roast in the crock pot.
  7. Cover and cook on low for 8-10 hours or until the meat is tender.
  8. Once cooked, shred the meat and serve with the gravy, garnished with fresh parsley.
