- 4 boneless, skinless chicken breasts
- 2 cups mushrooms, sliced
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper, then add them to the skillet.
- Cook the chicken for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the sliced mushrooms and cook until they are browned.
- Add the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and bring to a simmer.
- Stir in the heavy cream and dried thyme, and let it simmer for a few minutes until the sauce thickens.
- Return the chicken to the skillet and coat it with the creamy sauce.
- Garnish with fresh parsley before serving.
Notes
- For a lighter version, you can substitute heavy cream with half-and-half.
- Serve with rice or pasta to soak up the delicious sauce.
