Ingredients

  • 1 cup heavy cream
  • 1 loaf of crusty bread, cubed
  • 6 cloves garlic, minced
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté the onion and garlic until fragrant.
  2. Add the vegetable broth and bring to a simmer.
  3. Stir in the heavy cream and season with salt and pepper.
  4. Blend the soup until smooth using an immersion blender.
  5. For the croutons, preheat the oven to 375°F (190°C).
  6. Toss the cubed bread with olive oil, salt, and pepper, then spread on a baking sheet.
  7. Bake for 10-15 minutes until golden and crispy.
  8. Serve the soup hot, topped with homemade croutons and fresh parsley.

Notes
