A flavorful and creamy Cajun chicken pasta dish featuring tender chicken breasts, a spicy Cajun seasoning blend, and a rich cream sauce tossed with fettuccine pasta.
Ingredients
12 ounces fettuccine pasta
2 tablespoons olive oil
2 boneless skinless chicken breasts, cut into 1-inch strips
2 tablespoons Cajun seasoning
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 small yellow onion, thinly sliced
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
Salt, to taste
Freshly ground black pepper, to taste
2 tablespoons chopped fresh parsley
Instructions
Bring a large pot of salted water to a boil. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium-high heat.
Toss the chicken strips with Cajun seasoning until evenly coated.
Add the chicken to the skillet and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced red bell pepper, green bell pepper, and onion. Sauté for 4-5 minutes until the vegetables are tender.
Add the minced garlic and cook for 1 minute until fragrant.
Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer and cook for 3-4 minutes until slightly thickened.
Stir in the grated Parmesan cheese until melted and smooth.
Return the cooked chicken to the skillet and stir to coat with the sauce. Season with salt and freshly ground black pepper to taste.
Add the cooked fettuccine pasta to the skillet and toss everything together until the pasta is evenly coated with the creamy Cajun sauce.
Remove from heat and sprinkle with chopped fresh parsley before serving.
