Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar, divided
  • 4 (8 oz) packages cream cheese, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh cranberries
  • 1/2 cup water
  • 1/4 cup orange juice
  • 1/4 cup cornstarch

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese and 1 cup sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  5. In a saucepan, combine cranberries, water, and orange juice. Cook until cranberries burst, then blend until smooth.
  6. Swirl the cranberry mixture into the cheesecake batter.
  7. Pour the batter over the crust in the springform pan.
  8. Bake for 55-60 minutes or until the center is set.
  9. Let cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a sweeter cheesecake, adjust the sugar in the cranberry mixture.
  • Top with whipped cream for added flavor.
  • Can be made a day in advance for better flavor.
