- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar, divided
- 4 (8 oz) packages cream cheese, softened
- 4 large eggs
- 1 teaspoon vanilla extract
- 2 cups fresh cranberries
- 1/2 cup water
- 1/4 cup orange juice
- 1/4 cup cornstarch
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese and 1 cup sugar until smooth.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- In a saucepan, combine cranberries, water, and orange juice. Cook until cranberries burst, then blend until smooth.
- Swirl the cranberry mixture into the cheesecake batter.
- Pour the batter over the crust in the springform pan.
- Bake for 55-60 minutes or until the center is set.
- Let cool, then refrigerate for at least 4 hours before serving.
Notes
- For a sweeter cheesecake, adjust the sugar in the cranberry mixture.
- Top with whipped cream for added flavor.
- Can be made a day in advance for better flavor.
