  • 1/4 cup water
  • 1 tablespoon lemon juice
  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 1 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • 1 pre-baked pie crust

Instructions

  1. In a saucepan, combine cranberries, sugar, and 1/4 cup water. Cook over medium heat until cranberries burst and mixture thickens.
  2. Stir in lemon juice and remove from heat.
  3. Dissolve gelatin in cold water and add to the cranberry mixture.
  4. Let the mixture cool to room temperature.
  5. In a separate bowl, whip the heavy cream with vanilla extract until soft peaks form.
  6. Fold the whipped cream into the cooled cranberry mixture until well combined.
  7. Pour the filling into the pre-baked pie crust and refrigerate until set, about 4 hours.
