Ingredients
1 tablespoon olive oil
1 pound ground turkey
1 medium onion, diced
3 cloves garlic, minced
2 cans (15 oz each) white beans, drained and rinsed
1 can (14.5 oz) diced tomatoes
2 cups low-sodium chicken broth
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
Salt and pepper to taste
Optional toppings: chopped cilantro, shredded cheese, sour cream
Instructions
Heat olive oil in a large pot over medium heat.
Add diced onion and cook until softened, about 5 minutes.
Stir in garlic and cook for 1 minute until fragrant.
Add ground turkey, breaking it up with a spoon, and cook until browned.
Mix in cumin, chili powder, smoked paprika, salt, and pepper.
Pour in diced tomatoes, white beans, and chicken broth.
Bring to a simmer, reduce heat to low, and cook uncovered for 30 minutes, stirring occasionally.
Adjust seasoning as needed, then serve with your favorite toppings.
