A quick and hearty dinner skillet combining quinoa, black beans, taco spices, and melted cheese for a family-friendly meal.
Ingredients
1 cup quinoa, rinsed
1 ¾ cups vegetable broth
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels (fresh or frozen)
1 packet taco seasoning
1 cup shredded cheddar cheese
Salt and pepper, to taste
Fresh cilantro, chopped (optional)
Sour cream or avocado for serving (optional)
Instructions
In a medium pot, cook quinoa in vegetable broth according to package instructions; set aside.
Heat olive oil in a large skillet over medium heat. Add diced onion and garlic; sauté until translucent.
Add black beans, corn, cooked quinoa, and taco seasoning to the skillet. Stir to combine and heat through.
Sprinkle shredded cheddar cheese evenly over the skillet mixture. Cover and cook until cheese is melted, about 3-5 minutes.
Season with salt and pepper to taste. Garnish with fresh cilantro if desired. Serve warm with sour cream or avocado.
