Cowboy Butter Shrimp Skewers

Description

Juicy shrimp grilled to perfection and coated in a rich, flavorful cowboy butter sauce. These shrimp skewers are perfect for summer barbecues and quick weeknight dinners.

1 pound large shrimp, peeled and deveined
8 wooden skewers, soaked in water for 30 minutes
1/2 cup unsalted butter, melted
3 cloves garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon smoked paprika
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons fresh parsley, finely chopped


Instructions

Preheat the grill to medium-high heat (about 400°F).
In a medium bowl, whisk together the melted butter, minced garlic, lemon juice, smoked paprika, chili powder, ground cumin, cayenne pepper, kosher salt, and black pepper until well combined.
Thread the shrimp onto the soaked wooden skewers, about 5-6 shrimp per skewer.
Brush the shrimp generously with the cowboy butter sauce on all sides.
Place the shrimp skewers on the preheated grill and cook for 3-4 minutes per side, or until the shrimp are opaque and cooked through.
While grilling, baste the shrimp with additional cowboy butter sauce to keep them moist and flavorful.
Remove the shrimp skewers from the grill and transfer to a serving platter.
Sprinkle the chopped fresh parsley over the shrimp skewers for garnish.
Serve immediately with extra cowboy butter sauce on the side if desired.
