Ingredients
2 large chicken breasts, diced
3 medium zucchinis, sliced
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 cup marinara sauce
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried Italian herbs
Salt and pepper to taste
Instructions
Preheat oven to 375°F (190°C).
In a skillet, heat olive oil over medium heat and cook chicken until lightly browned, about 5-7 minutes.
Add garlic and cook for another minute until fragrant.
In a baking dish, layer zucchini slices evenly and top with cooked chicken.
Pour marinara sauce over the top and sprinkle with Italian herbs, salt, and pepper.
Cover with mozzarella and Parmesan cheeses.
Bake uncovered for 30-35 minutes until cheese is golden and bubbly.
Let rest for 5 minutes before serving.
