Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • 1 ripe mango, peeled and diced
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Preheat the oil in a deep fryer or large skillet over medium heat.
  2. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with a mixture of coconut and panko breadcrumbs.
  3. Season the shrimp with salt and pepper.
  4. Dredge each shrimp in flour, dip in the egg, and then coat with the coconut-panko mixture.
  5. Fry the shrimp in batches until golden brown, about 2-3 minutes per side.
  6. Remove the shrimp and drain on paper towels.
  7. For the mango dipping sauce, blend the diced mango, mayonnaise, lime juice, and a pinch of salt until smooth.
  8. Serve the coconut shrimp hot with the mango dipping sauce on the side.
