- 1 cup shredded coconut
- 1 cup panko breadcrumbs
- 2 eggs, beaten

- 1 ripe mango, peeled and diced

- 1 tablespoon lime juice
- Salt and pepper to taste
- Oil for frying
Instructions
- Preheat the oil in a deep fryer or large skillet over medium heat.
- Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with a mixture of coconut and panko breadcrumbs.
- Season the shrimp with salt and pepper.
- Dredge each shrimp in flour, dip in the egg, and then coat with the coconut-panko mixture.
- Fry the shrimp in batches until golden brown, about 2-3 minutes per side.
- Remove the shrimp and drain on paper towels.
- For the mango dipping sauce, blend the diced mango, mayonnaise, lime juice, and a pinch of salt until smooth.
- Serve the coconut shrimp hot with the mango dipping sauce on the side.
