- 1 pound baby potatoes, halved
- 1 pound green beans, trimmed
Instructions
- Preheat the oven to 425°F (220°C).
- In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
- Rub the mixture all over the beef tenderloin.
- Place the beef on a sheet pan and surround it with halved baby potatoes and green beans.
- Drizzle the vegetables with olive oil and season with salt and pepper.
- Roast in the preheated oven for 25-30 minutes, or until the beef reaches your desired doneness.
- Let the beef rest for 10 minutes before slicing and serving.
