- 4 chicken thighs, bone-in and skin-on
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup white wine
- 1 cup chicken broth
- 1 tablespoon capers
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh parsley, chopped
Instructions
- Season the chicken thighs with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat.
- Add the chicken thighs, skin-side down, and cook until browned, about 5-7 minutes.
- Flip the chicken and add the chopped onion and minced garlic to the skillet.
- Cook for another 3-4 minutes until the onion is translucent.
- Pour in the white wine and chicken broth, then add the capers and herbs.
- Bring to a simmer, cover, and cook for 30-35 minutes until the chicken is cooked through.
- Remove the lid and let the sauce reduce for an additional 5-10 minutes.
- Serve hot, garnished with fresh parsley.

- Feel free to substitute chicken breasts if preferred.
