- 1 lb carne asada (marinated beef)
- 4 large flour tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 tablespoon olive oil
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced onions and bell peppers, sauté until softened.
- Add carne asada to the skillet and cook until browned and cooked through.
- Remove the meat and vegetables from the skillet and set aside.
- Place a tortilla in the skillet, sprinkle half with cheese, add the carne asada mixture, and top with more cheese.
- Fold the tortilla in half and cook until golden brown on both sides and cheese is melted.
- Repeat with remaining tortillas and filling.
- Slice and serve with salsa or guacamole.
