Ingredients

  • 1 lb carne asada (marinated beef)
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onions and bell peppers, sauté until softened.
  3. Add carne asada to the skillet and cook until browned and cooked through.
  4. Remove the meat and vegetables from the skillet and set aside.
  5. Place a tortilla in the skillet, sprinkle half with cheese, add the carne asada mixture, and top with more cheese.
  6. Fold the tortilla in half and cook until golden brown on both sides and cheese is melted.
  7. Repeat with remaining tortillas and filling.
  8. Slice and serve with salsa or guacamole.
