Cajun Style Baked Turkey Breast with Vegetables

Description

1 (4-pound) boneless skin-on turkey breast
2 tablespoons olive oil, divided
2 teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon cayenne pepper
1 teaspoon ground black pepper
1 teaspoon salt
4 medium carrots, peeled and cut into 2-inch pieces
3 medium red potatoes, cut into 1-inch chunks
1 large red bell pepper, cut into 1-inch pieces
1 large yellow onion, cut into wedges
3 cloves garlic, minced
1/2 cup low-sodium chicken broth


Instructions

Preheat the oven to 375°F (190°C).
In a small bowl, combine smoked paprika, garlic powder, onion powder, dried oregano, dried thyme, cayenne pepper, black pepper, and salt to make the Cajun spice mix.
Pat the turkey breast dry with paper towels. Rub 1 tablespoon of olive oil evenly over the turkey breast.
Generously coat the turkey breast with the Cajun spice mix, pressing the spices into the skin and meat.
In a large roasting pan, toss the carrots, red potatoes, red bell pepper, yellow onion, and minced garlic with the remaining 1 tablespoon of olive oil and a pinch of salt and black pepper.
Place the seasoned turkey breast on top of the vegetables in the roasting pan.
Pour the chicken broth into the bottom of the roasting pan to keep the vegetables moist during baking.
Bake uncovered in the preheated oven for 1 hour and 15 minutes, or until the internal temperature of the turkey breast reaches 165°F (74°C) when measured with a meat thermometer.
About halfway through cooking, stir the vegetables gently to ensure even roasting.
Once cooked, remove the turkey breast from the oven and let it rest for 10 minutes before slicing.
Serve the sliced Cajun baked turkey breast alongside the roasted vegetables.
