Ingredients

  • 1 lb chicken breast, grilled and sliced
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1 cup shredded lettuce
  • 1/2 cup shredded cheese
  • 1/4 cup salsa
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the rice according to package instructions.
  2. Season the chicken breast with olive oil, cumin, chili powder, salt, and pepper, then grill until fully cooked.
  3. In a bowl, layer the cooked rice as the base.
  4. Add the grilled chicken slices on top of the rice.
  5. Layer black beans, corn, diced tomatoes, and shredded lettuce over the chicken.
  6. Top with sliced avocado, shredded cheese, and salsa.
