- 4 medium sweet potatoes
- 2 cups cooked shredded chicken
- 1/2 cup buffalo sauce
- 1/2 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
- In a bowl, mix the shredded chicken with buffalo sauce until well coated.
- Once the sweet potatoes are cooked, slice them open and fluff the insides with a fork.
- Stuff each sweet potato with the buffalo chicken mixture.
- Top with shredded cheddar cheese and return to the oven for an additional 10 minutes until the cheese is melted.
- Drizzle ranch dressing over the stuffed sweet potatoes and garnish with chopped green onions before serving.
Notes
- For a milder flavor, use less buffalo sauce.
