Description

A delicious and healthy meal featuring sweet potatoes stuffed with spicy buffalo chicken and drizzled with ranch dressing.


Ingredients

  • 4 medium sweet potatoes
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
  3. In a bowl, mix the shredded chicken with buffalo sauce until well coated.
  4. Once the sweet potatoes are cooked, slice them open and fluff the insides with a fork.
  5. Stuff each sweet potato with the buffalo chicken mixture.
  6. Top with shredded cheddar cheese and return to the oven for an additional 10 minutes until the cheese is melted.
  7. Drizzle ranch dressing over the stuffed sweet potatoes and garnish with chopped green onions before serving.

Notes

  • For a milder flavor, use less buffalo sauce.
