A delicious and energizing recipe for mint chocolate chip protein balls, perfect for a quick snack or post-workout boost.


Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup chocolate protein powder
  • 1/4 cup mini chocolate chips
  • 1/2 teaspoon peppermint extract
  • 1/4 cup shredded coconut (optional)

Instructions

  1. In a large bowl, combine the rolled oats, almond butter, honey or maple syrup, and chocolate protein powder.
  2. Add the mini chocolate chips and peppermint extract, mixing until well combined.
  3. If desired, fold in the shredded coconut.
  4. Using your hands, roll the mixture into small balls, about 1 inch in diameter.
  5. Place the protein balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up.
  7. Store in an airtight container in the refrigerator for up to a week.

Notes

  • Feel free to adjust the sweetness by adding more or less honey/maple syrup.
