- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/4 cup chocolate protein powder
- 1/4 cup mini chocolate chips
- 1/2 teaspoon peppermint extract
- 1/4 cup shredded coconut (optional)
Instructions
- In a large bowl, combine the rolled oats, almond butter, honey or maple syrup, and chocolate protein powder.
- Add the mini chocolate chips and peppermint extract, mixing until well combined.
- If desired, fold in the shredded coconut.
- Using your hands, roll the mixture into small balls, about 1 inch in diameter.
- Place the protein balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the refrigerator for up to a week.
Notes
- Feel free to adjust the sweetness by adding more or less honey/maple syrup.
- These protein balls can be frozen for longer storage.
