Instructions
- In a large skillet, heat butter and olive oil over medium heat. Add the sliced onions and cook until caramelized, about 20-25 minutes.
- Meanwhile, cook the gnocchi according to package instructions and set aside.
- Add the beef broth and thyme to the caramelized onions, bringing to a simmer.
- Stir in the cooked gnocchi and season with salt and pepper.
- Transfer the mixture to a baking dish, top with shredded Gruyère cheese, and broil until the cheese is bubbly and golden.

- For a vegetarian version, use vegetable broth instead of beef broth.
