Description

BBQ Chicken Quesadillas are a delicious and easy-to-make dish that combines tender chicken, tangy BBQ sauce, and melted cheese, all wrapped in a crispy tortilla.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup BBQ sauce
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped (optional)

Instructions

  1. In a bowl, mix the shredded chicken with BBQ sauce until well coated.
  2. Heat a skillet over medium heat and add olive oil.
  3. Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
  4. Add half of the BBQ chicken mixture and some red onion on top of the cheese.
  5. Fold the tortilla over and cook for 3-4 minutes until golden brown.
  6. Flip and cook the other side for another 3-4 minutes until the cheese is melted.
  7. Remove from skillet and repeat with the remaining ingredients.
  8. Slice into wedges and serve with cilantro if desired.

Notes

  • Feel free to add other toppings like jalapeños or bell peppers.
  • These quesadillas can be made ahead of time and reheated.
  • Serve with sour cream or guacamole for extra flavor.
