Ingredients

- 1/2 pound grilled pork or chicken
- 1/2 cup pickled carrots
- 1/2 cup cucumber, sliced
- 1/4 cup fresh cilantro
- 1/4 cup sliced jalapeños
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon lime juice
Instructions
- Cook the jasmine rice according to package instructions.
- Grill the pork or chicken until fully cooked, then slice.
- Prepare the pickled carrots by soaking them in vinegar and sugar for at least 30 minutes.
- In a bowl, combine the cooked rice, grilled meat, pickled carrots, cucumber, cilantro, and jalapeños.
- Drizzle with soy sauce, sesame oil, and lime juice before serving.
Notes
- For a vegetarian option, substitute grilled tofu for the meat.
- Adjust the level of spiciness by adding more or fewer jalapeños.
