- 1 cup corn starch
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- 1 cup lettuce, shredded
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced

- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (optional)

Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, season the diced chicken with salt and pepper.
- Dredge the chicken pieces in corn starch, then dip in beaten eggs, and finally coat with panko breadcrumbs.
