- 4 large bell peppers
- 1 lb ground turkey or beef
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 1 tablespoon taco seasoning

- Fresh cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, cook the ground turkey or beef over medium heat until browned.
- Add black beans, corn, diced tomatoes, taco seasoning, salt, and pepper to the skillet. Stir to combine and heat through.
- Stuff the bell peppers with the meat mixture and place them in a baking dish.
- Top each stuffed pepper with shredded cheese.
- Bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
- Garnish with fresh cilantro before serving.
