Description

Apricot Protein Bites are a nutritious and tasty snack made with dried apricots, nuts, and protein powder, perfect for a quick energy boost.


Ingredients

  • 1 cup dried apricots
  • 1/2 cup almonds
  • 1/2 cup walnuts
  • 1/4 cup protein powder
  • 1/4 cup honey
  • 1/4 cup shredded coconut
  • 1/2 tsp vanilla extract

Instructions

  1. In a food processor, combine dried apricots, almonds, and walnuts. Pulse until finely chopped.
  2. Add protein powder, honey, shredded coconut, and vanilla extract. Blend until the mixture is well combined.
  3. Transfer the mixture to a bowl and refrigerate for 30 minutes.
  4. Once chilled, roll the mixture into small balls, about 1 inch in diameter.
  5. Store the protein bites in an airtight container in the refrigerator.
