Ingredients

  • 1 cup lupini beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, pitted and sliced
  • 1/2 cup green bell pepper, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup mozzarella balls
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the lupini beans, cherry tomatoes, black olives, green bell pepper, red onion, and fresh basil.
  2. Add the mozzarella balls to the bowl.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Let the salad sit for at least 15 minutes to allow the flavors to meld.
  6. Serve chilled or at room temperature.
