Ingredients

- 1 cup lupini beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, pitted and sliced
- 1/2 cup green bell pepper, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh basil, chopped
- 1/4 cup mozzarella balls
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the lupini beans, cherry tomatoes, black olives, green bell pepper, red onion, and fresh basil.
- Add the mozzarella balls to the bowl.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Let the salad sit for at least 15 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.

- Feel free to add other vegetables or proteins to customize the salad.
- This salad can be made a few hours in advance for better flavor.
